Punching Down

Punching down is a method of cap management used by winemakers. The winemakers need to break up the skins, stems, and seeds which form a cap over the fermenting wine in order to maximise the contact between the fermenting wine and the skins. This allows maximum extraction of flavour, tannins, and colour.

We visit wineries, restaurants and other highlights to give you the information you need to plan a great trip to Italy. We can design itineraries, advise on bookings and show you the Italy that the tour companies don’t tell you about.
