Polyphenols

In addition to being components of certain foods, polyphenols are also found in wine, particularly red wines. These polyphenols came mainly from the grape skins. Because red wines spend more time in contact with the grape skins they have been found to be higher in these antioxidants than white wines. Even the red wines differ in terms of the polyphenols contained – in Italy, the Sagrantino grape from Umbria, Nebbiolo grape from Piedmont, and the Oseleta from Verona are thought to contain the highest levels of polyphenols.
