Pied de Cuve

Pied de Cuve is a technique whereby grapes are collected a few days before the harvest and the grapes are then crushed. The grape juice is then allowed to start fermenting with the wild yeasts present on the grapes. This is then added to the main harvest and ferments the wines. This helps the winemaker to complete a clean fermentation that consumes all the sugars, resulting in a dry wine.
