Fining

Fining is a method of removing unwanted elements in a wine which may affect the appearance and flavour. Various agents can be used such as powdered clay (bentonite), isinglass (a protein derived from fish bladders), milk proteins, gelatine or egg whites. These agents combine with sediment particles causing them to settle to the bottom. The use of most of these agents mean that the producer cannot (or shouldn’t) market the wine as suitable for vegans.
