Bouquet

The human tongue is limited to the primary flavours of salty, sweet, sour, bitter, and umami (savoury). The human nose, fortunately, is not limited and so we can enjoy the bouquet or aromas of wine. The bouquet generally refers to the smells which arise from the fermentation and ageing of the wine.
