Pergola Canevasana

A canevasana pergola is a traditional method of training vines and used in Piedmont. The vines produce a green canopy at a height of around two metres which requires manual cultivation and harvesting. This helps to shade the grapes from the white-hot heat of the Italian summer, can be used to preserve moisture because of the shade, and makes for easier harvesting.
