A wine with DOCG status from the Veneto. The name means the big bitter one. Produced within the area known as Valpolicella near Verona, this wonderful red has a special twist in its production. After harvest, normally around October, the grapes are air dried to concentrate the sugars. Wine production cannot start before the first of December – although usually it starts in January or February – producing a wine with a minimum alcohol level of 14% although 15% is more typical.
